Come and discover the French pastry basics with our teaching Chefs at the heart of the Ritz’ Paris kitchens!

We have designed a program to have you discover the all-time classics, with a nice touch of modernity.

The techniques that will be taught during the course:

- Lining a tart shell and preparing a tart
- Preparing a ‘cannelé’ batter and flan cream
- Assembling individual layered mousse cakes
- Preparing puff pastry
- Kneading a brioche dough
- Working with fresh fruit
- Preparing some crunch recipes
- Preparing some caramel and praline paste
- Preparing whipped ganache
- Demonstrating chocolate decoration techniques


From 14th to the 18th of July 2025

- Hazelnut Pithiviers
- Pistachio mille-feuille
- Chocolate tart
- Vanilla, raspberry and verbena choux
- Orange blossom and vanilla flan
- Caramel flan
- Vanilla rum baba
- Traditional cannelés
- Raspberry sacher.


One hour break per day, lunch not included.

Trainees will be awarded a certificate at the end of each training course.

Sessions will only be held if at least 4 students are signed up.
