Description
Come discover the base recipes of French Cuisine with our teaching Chefs!

We have designed a program to introduce you to fundamental traditional recipes with a touch of modernity!

It will allow the participants to learn the following techniques:

• Chopping vegetables
• Preparing meat jus
• Making fish stocks and sauces
• Filleting a whole fish and cooking it
• Cutting and cooking meat
• Plating

From July 18 to 22 2022

• White chicken stock
• Barigoule-style 'Violet de Provence' artichokes
• Leeks vinaigrette with eggs mimosa
• Poached eggs in a Meurette wine sauce
• Tomato several ways, burrata, and basil condiment
• Sea bream tartar, mango and green apple with fresh herbs
• Dugléré-style fillet of brill
• Seared red mullet wrapped in bacon, fennel glazed in chicken jus
• Salt-baked fish
• Duck shepherd's pie
• Rossini-style beef fillet with potatoes Anna
• Braised lamb shanks and potato gnocchi


Lunch included.

Trainees will be awarded a certificate at the end of each training course.

Sessions will only be held if at least 4 students are signed up.
