Description
Come discover the base recipes of French Cuisine with our teaching Chefs!

We have designed a program to introduce you to fundamental traditional recipes with a touch of modernity!

It will allow the participants to learn the following techniques:

• Chopping vegetables
• Preparing meat jus
• Making fish stocks and sauces
• Filleting a whole fish and cooking it
• Cutting and cooking meat
• Plating

From July 11 to 15 2022

• White chicken stock
• Lobster stock
• Traditionnal lobster bisque
• Stuffed Meditarrenean squid, jus emulsified with squid ink
• Bouillabaisse
• Sole a la Coquelin - 'Ritz Escoffier Legacy'
• Potato gnocchi, baby spinach, reduced veal jus
• Vegetable tartare with a pistou sauce
• Carpaccio and zucchini flower fritter
• Tarragon chicken fricassée
• Duck breasts, dauphine potatoes, glazed carrots and Bigarade orange sauce
• Madeira veal sweetbreads, artichoke puree and noisette potatoes


Lunch included.

Trainees will be awarded a certificate at the end of each training course.

Sessions will only be held if at least 4 students are signed up.
