The Ecole Ritz Escoffier’s interpretation of traditional French Cuisine Christmas recipes.

Professional training sessions designed for advanced cooking and baking enthusiasts.

Training session goals:

- Prepare fine dining recipes to create impressive holiday season menus.
- Work with the finest ingredients.
- Acquire plating and presentation skills.


Schedule from December 16-18th, 2020

- Foie gras terrine
- Shredded brown crab in a Ritz Champagne jelly, crunchy roots
- Rossini Scallops
- Braised beef chuck, truffled potato 'cappuccino'
- Classic lobster bisque
- Duck 'Pithiviers' torte in puff pastry with Perigueux sauce
- Comte cheese and yellow wine soufflé
- Semi-cooked Norway lobster in a kumbawa marinade, clementine, cardamom and ginger chutney, clementine jelly and caramelized carrots
- Truffle crust veal filet, vegetable cocotte and périgueux sauce



A certificate is awarded to our students after completion of each training session.

Please note that a minimum of four participants is required for each training session to be held.
