O Christmas tree, how lovely are thy branches... François Perret has
made this Christmas song his own by creating a Christmas tree
dessert that will delight all those who are fond of sweet things.
Its tip, an individual portion, makes a charming little festive conifer
all on its own. Then, section by section, it can grow in size to
become a full Christmas tree.
This generous tree highlights the Christmas flavors of chocolate
and praline. Inside is a light, airy mousse made with a 72% Panama
grand cru chocolate, for which François Perret sought out the cocoa
beans himself, as well as a toasted, caramelized and deliciously
crunchy almond praline, and layers of flour biscuit. Golden tinsel
runs along its icing. A delicate chocolate star biscuit shines at the
top, like an invitation to the ethereal magic of a ritzy Christmas,
around a tree made by the world’s top pastry chef.


Practical information:

- The participants will be welcomed and will be able to have a discussion with François Perret while enjoying some sweet mignardises. A demonstration of his Christmas tree dessert will follow.
- A Christmas tree dessert by François Perret (serves 10) will be given to each participant.
- Classes taught in French and consecutively translated into English.
- As a souvenir, the Ecole Ritz Escoffier apron are offered at the end of the class.
