Preparing gourmet tarts and unique cakes.

Professional training sessions designed for advanced cooking and baking enthusiasts.

Training session goals:

- Learn how to line a tart case
- Assemble some simple layered cakes (sponge cake, insert…)
- Make icings, glazes, velvet effect preparations, coatings
- Decorate (introduction to a variety of decorating techniques: pipping, preparing chocolate decorations…)

- Lemon tart
- Pear and ginger tart
- Chestnut and blackcurrant cheesecake tart
- Cherry ‘gateau basque’
- Hazelnut and lemon marbled cake
- Vanilla madeleine, lemon glaze
- Chestnut honey madeleine, Gianduja filing
- Coconut cake, Gianduja and passion fruit
- Vanilla and grapefruit Savoy sponge cake
- Pecan nut and vanilla flan cake
- Canneles from Bordeaux


A certificate is awarded to our students after completion of each training session.

Please note that a minimum of four participants is required for each training session to be held.
