Vitello tonnato with aged Parmigiano Reggiano, confit tomatoes, pine nuts and rocket leaves - Rack of lamb, anchovy and rosemary condiment, grenaille potatoes, lamb jus - Duck breast served with yellow fruit, cumin-scented couscous - Hay-smoked hanger steak, spelt with chanterelle mushrooms, green asparagus.
